Easiest Way To Shred Chicken

Shredding chicken is literally one of my least favorite things in the world. I'm not really sure why, but it's something that I always dread. So much so, in fact, that I make my husband do it. I want him to feel needed, you see :)

Over the summer I make chicken salad pretty much weekly. I usually make a big batch on Sunday night and then we can take it for lunches and eat on it throughout the week. I have about 4-5 great chicken salad recipes with all different flavors so we don't get bored with it. Worst part of this......the shredding.

This past week while making this chicken salad recipe, I decided to try this out:

I heard someone say once that you could shred chicken in a stand mixer. I was rather skeptical at first but I figured it was worth a try.

Turns out, it really works!!! The consistency of the chicken is a bit different than when you shred it with forks but I actually liked it better.

It also left a few (very few) large clumps of the skin that wouldn't shred. Those made a great little treat for the pups and in the end, we were all happy.
